{In the Kitchen Thursday} Chocolate Chip Oat Cookies

I was in the mood for some cookies the other night.  I looked through my many cookies cookbooks and found this recipe that looked quick, easy, and different.  I apologize for the ugly picture.  Most of the cookies had already been eaten by the time I took this picture. They are yummy!
Chocolate Chip Oat Cookies
Adapted from Cookies, Bars, and Muffins Cookbook

1 package yellow cake mix
1 teaspoon baking powder
3/4 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
1 cup uncooked old fashioned oats
3/4 cup semisweet chocolate chips

Preheat oven to 350 degrees F.  Lightly grease cookie sheets or line with parchment paper.

Stir together cake mix and baking powder in large bowl.  Add oil, eggs and vanilla; beat by hand until well blended.  Stir in oats and chocolate chips.

Drop dough by slightly rounded tablespoonfuls 2 inches apart onto prepared cookie sheets.  Bake 10 minutes or until golden brown.  Do not overbake

Let cookies stand on cookie sheets 5 minutes; transfer to wire racks to cool completely.
Makes 4 dozen cookies
